With a moderate level of heat (30,000 SHU), this Aji Lemon powder can be used to season a recipe without losing flavor to the heat. We grow Aji Lemon peppers in our garden. They are very prolific and always result in an overabundance of chilis. As such we can’t possibly use them all fresh so we dehydrate the excess and make chili powder. We take care to remove seeds before dehydrating which results in a high-quality powder with no additives. The chilis are a bright yellow when freshly harvested but brown slightly when drying. The Aji Lemon is a Peruvian pepper, also known as Aji Limo, Ají Limón or Aji Lemon Drop. The word Aji simply means “pepper” in their native geographical location. This pepper powder has a fruity, slightly citrus flavor which makes it pair well with chicken or fish. Used directly in recipes, rub it on some chicken wings, season some fish filets, or add it to soups, or sprinkle on pizza for a new dimension of flavor. We include a food safe desiccant in each package to prevent clumping and preserve freshness. We also sell Aji Lemon pepper seeds in our shop if you’d like to grow your own fresh pods.
Hot Sauce Using Aji Lemon Powder
- 2-3 Tbsp Aji powder
- 1/2 tsp coriander powder
- 1/4 teaspoon cumin
- 4 cloves garlic, diced
- 1 cup apple cider vinegar
- 1/4 cup olive oil
- Honey, to taste
- Salt, to taste
Heat vinegar, coriander, cumin, garlic, oil, and pepper powder in a small sauce pan for 5 minutes. Add honey and salt to taste. Allow to cool before adding to blender. Mix until smooth consistency. Must be refrigerated, use within one month.
