Santaka Chili Pepper Seeds

We’re pleased to be able to provide you with this wonderful heirloom Japanese favorite. Santaka Chili pepper seeds produce short stout plants supporting loads of 2-3″ chilis. Also known as Japones or “Asian Hot”. This is a mirasol type pepper meaning the chilis grow pointing up. It has a tapered teardrop shape and grows in large clusters. Although not strictly ornamental, the Santaka plants will add nice visual interest to the vegetable garden. The heat is intense, topping out around 50,000 SHU on the Scoville scale. Peppers mature from green to red and can be used at any stage, however the heat intensifies as they ripen to red.

Popular in Japan and other Asian countries, these little chilis have a lot of culinary use. Santaka is the ideal pepper for Asian cooking. The flavor profile is not very complex, it is simple direct heat that can be easily balanced when mixed with other spices. Can be dried and made into powder that works well for sauces, curries, and sliced thinly and added to stir fry dishes. Companion flavors include cilantro, garlic, basil, and lemongrass. We love using these peppers with sauteed eggplant.
